Sambhar Masala

Option Sambhar Masala is an age old recipe of Indian spices to make authentic Sambhar - the most cherished lentil based thin curry cooked with vegetables.  It is a true accompaniment for many South Indian delicacies such as Idli, Dosa, Medu Vada or simply plain rice.




Coriander, Chilli, Cumin, Fenugreek, Bengal Gram, Black Gram, Pigeon Pea, Black Pepper, Turmeric, Dry Ginger, Salt, Curry Leaves, Asafoetida.

Heat up some oil in a pan.  Add mustard seeds, cumin seeds, fenugreek seeds, whole red chilli, curry leaves, asafoetida and ginger paste.  Add add cut vegetables such as onion, pumpkin, bottle gourd, drumsticks, tomatoes etc. Add Option Sambhar Masala, chilli powder, turmeric powder & little rice flour.  Add tamarind juice.  Mix well & add boiled tur dal.  Add salt to taste & freshly chopped coriander leaves.  Add water to adjust the consistency.  Now cover the pan with lead and let it simmer for at least 15 to 20 minutes on slow flame. Keep stirring gently in between.  Serve hot in a bowl with Idli, Medu Vada, Dosa or plain rice.
